    Juiced fresh pomegranates through screen to remove seeds and make 
    about 1-1/4c juice.  Mixed honey, Knudsen juice, and water to 4
    gallons in kettle.  heated to 180F for several minutes, then
    chilled.  Mixed yeast and nutrient with water at 100F (yeast is very
    sensitive to rehydration temperature, according to brewer at
    Redstone).  Pitched yeast at 85F.  Fermented very dry, strong
    alcohol character.  The tannins in the fruit add some nice
    complexity, but finished product is tart.  Adding a little honey to
    the end might help, or blending with a tranditional mead.
    Otherwise, it is very tasty.  Thanks to Redstone for the yeast and a
    box of those nice blue flip-top bottles for bottling!!
